:HI!: This is a recipe my hubby taught me to fix. Enjoy!
*Richard's Burritos*
Beef Mixture
2-lb ground beef (can use lean and season to taste)
1 (12-oz) tube beef Chorizo
2 med. can ranch style beans (can use 1 large can)
1 to 2 sm. hot peppers (green ones)
1 med. onion
Cook ground beef, chopped onions and hot peppers until well done. Drain well. Add 1/2 tube (can freeze other 1/2) of beef Chorizo to the ground beef. Mix well, and cook about 15 minutes, mixing until Chorizo and beef mixture are an even mixture. Drain any excess fat. Add whole can of ranch style beans to beef mixture. Mix well and cook over medium heat until mixture begins to bubble. Stir often to prevent sticking. After mixture starts to bubble, reduce heat; cover and simmer 10-15 mins, or until beans are soft. Remove from heat, set aside, and prepare tortillas.
Tortillas and Toppings
1 pkg. tortillas (10 count)
1 pkg. sharp/Monterey jack cheese, grated
1 sm. head of lettuce, shredded
2 med. tomatoes, chopped
1 bottle Garlic/Ranch salad dressing
Butter and heat both side of tortillas. Remove from heat and sprinkle cheese in middle of tortilla. Add beef and bean mixture and tomatoes and lettuce, then squeeze a desired amount of Garlic/Ranch salad dressing.
You are ready to serve!
**Note: Can be rolled, and stored in freezer, then heated in microwave for later meals.
